MAIN MISSIONS:
He/she guarantees the hygiene, the safety and the quality of the services, restaurant/kitchen, and bar, and their integration with the activities of the village
He/she federates and coordinates its teams around objectives, attitudes and behavior, shared in common
He/she guarantees the budget by the management of its costs and by the improvement of the profitability of its activities with the cooperation of the chef, bar manager, and restaurant manager

MANAGER TEAMS OF THE DEPARTMENT FOOD AND BEVERAGE
Control that the choice of staff made by the Human resources is in accordance with the needs of the service
Train his (her) direct co-workers and assess their potential
Make sure that his (her) direct co-workers train their respective teams
Oversee by its presence the key moments of the various services in these services
Estimate his (her) direct co-workers on the basis of the objectives fixed with them and identify potential
Control the evaluation of the GO / GE realized by his (her) direct co-workers
Optimize its resources in strength with the cooperation of the HR manager
Elaborate the hourly schedules of his (her) direct co-workers, his (her) assistant
Control and validate the hourly schedules of the teams of his (her) direct co-workers according to the legislation
Decide and argue the penalties for the noticed grave facts
Animate, motivate, and direct the actions of his (her) direct co-workers, his (her) assistant

MAKE SURE OF THE APPLICATION OF THE STANDARDS AND THE PROCEDURES
Set up the standards and the procedures (Quali-Signs Pro-Signs)
Control the application of Quali-Signs Pro-Signs)
Make sure of the application of the corrective actions in accordance with the standards and the procedures
Create a relation with the GM
Report the respect for Quali-Signs Pro-Signs
Raise the awareness of the DM of waste sorting and follow it up using a daily table.

GUARANTEE THE HYGIENE AND THE SAFETY IN THE BAR, THE KITCHEN, THE MAIN STORE, THE RESTAURANT
Set up the H.A.C.C.P. method and the safety regulations
Control the application of the H.A.C.C.P method. And the safety regulations
Make sure of the application of the corrective actions in accordance with the H.A.C.C.P. method and the safety regulations
Plan and inspect the cleaning of premises and equipments
Watch the maintenance and the conservation of the patrimony and equipments
Report the application of the rules of hygiene and safety
Participate in hygiene and safety committees

MANAGE THE ACTIVITIES BAR, KITCHEN, MAIN STORE, RESTAURANT
Create the conditions (organization, product ion, development) to achieve the FB budget in the respect for Quali-Signs with the cooperation of the chef
Make sure permanently of the correspondence of the economic results with the budget FB (Cost / hotel days, local sales and bar cost)
Assist the chief of bar in the development of the local sales and the management of the costs
Validate the expressions of need of his (her) direct co-workers
Identify the potential savings and implement them in the respect for Quali-Signs
Identify and argue the needs of investment with his (her) direct co-workers
Establish the economic validity of the special events
Validate the inventories and the economic situations established by the assistant
Organize punctual controls (locations of good storage, recorded data)
Report economic results of the various activities FB

PARTICIPATE IN F AND B PURCHASING PROCESS
Apply the world and sector FB partnership agreements
Assist the assistant in the ion of the local suppliers (not referenced)
